Ok, so right now I'm kinda broke. I start this way to explain why I get ground sausage and make my own patties ( a pound at a time) instead buying sausage patties already made up. Anyway, I like breakfast sandwiches so I make them myself.

1 egg, 1 sausage patty, cheese (that my roommate/sister chops up for me) 1 tortilla. Right now my tortillas are too big for breakfast sandwiches so I cut one in half and then make each half about the size of the final product.

crack the egg into the pan, break the yoke. cut up a couple of cubes of cheese to much smaller size. put one of the sausage patties in the pan because they've been in the fridge and are cold. When the cheese has melted a bit flip the egg over to cook on the other side. Put the sausage patty on top and after a few seconds flip the whole stack over so the sausage patty is on the bottom. Take one of your precut tortilla pieces and put it on top of the egg and flip it over again. Put the other tortilla piece on the top. Put the pieces of tortilla you cut off on the pan to toast up a little bit.
